Ingredients

  • 12-oz. pkg. black turtle beans
  • 6 cups Homemade Chicken
  • Broth *
  • 2 tablespoons margarine or
  • butter
  • 1 cup chopped onions
  • 1 cup chopped celery
  • 1 cup shredded carrots
  • 1 cup shredded potatoes
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon oregano
  • 1/4 teaspoon pepper
  • 3 tablespoons lemon juice
  • Lemon slices. if desired

Preparation

Step 1

In 6-quart Dutch oven or large deep
pot. cover beans with water; soak
overnight or at least 12 hours.
Drain beans. Return beans to Dutch
oven; add chicken broth. Bring to a
boil; reduce heat and simmer covered
1 ½ to 2 hours.
In large skillet. melt margarine. Saute
onions. celery and carrots for 3 to 5
minutes or until crisp-tender. Add
sauteed vegetables and remaining
ingredients. except lemon juice and
sliced lemon. to beans; stir well.
Simmer covered an additional 45 to
60 minutes or until vegetables are
tender. Just before serving. stir in
lemon juice. Garnish with lemon
slices. 6 (1 1/2 -cup] servings.
TIP: • Canned chicken broth can be
used; however. it can be high
in sodium. If used. salt can be
omitted from recipe.
