Raspberry Chia Jam

Ingredients

  • 1 lb. fresh raspberries
  • 1/4 t kosher salt
  • 4 t chia seeds
  • 1 T honey
  • 1 t lemon juice

Preparation

Step 1

Place raspberries, 1/4 cup water, and salt in a medium pan. Cover and bring to a simmer over medium heat. Reduce heat to medium and simmer until raspberries begin to burst, about five minutes. Uncover and continue to cook, stirring often and mashing gently, until mixture thickens, 8 to 10 minutes. Remove from heat and stir in chai seeds, honey, and lemon juice. Let cool completely.
Transfer to a container with the lid and refrigerate for up to one week. Jam will continue to thicken as a chills.
