Ingredients
- 2 + 1 ½ cups of flour
- 1 cup of granulated sugar
- 2 eggs
- ½ cup of milk
- ½ cup of butter, room temperature
- ¼ cup of butter, melted
- 2 teaspoons of vanilla extract
- 2 teaspoons of baking powder
- ½ cup of brown sugar
- 2 teaspoons of cinnamon
Preparation
Step 1
Preheat oven to 375 degrees Fahrenheit.
In a bowl, beat eggs, milk, ½ cup of room temperature butter and vanilla extract until smooth. Slowly add in 2 cups of flour, 1 cup of granulated sugar, baking powder and 1 teaspoon of cinnamon. Set batter aside.
In a smaller bowl, make the topping by mixing 1½ cups of flour, ¼ cup of melted butter, ½ cup of brown sugar and 1 teaspoon of cinnamon. Stir with a fork until crumbly.
Scoop batter into each compartment of a greased muffin pan. Sprinkle the top of each batter scoop with about a tablespoon full of the topping, more if you have some leftover. Bake for 15-20 minutes until the crumble topping is nice and golden.
Cool for a few minutes and serve warm!
