Roasted Cherries and Sweet Potatoes

This modified recipe from the Costco Connection (Superfresh Growers) is an excellent side dish for a summer or tropical meal. Size of sweet potato chunks will determine the cooking time: if larger than 1/2 inch, increase time by 5 min or until tender. The sorrel adds a bit of lemony flavor to mix and the lime juice adds a little tropical kick if you choose.
Ingredients
- 1 1/2 lbs sweet potatoes or yams
- 1 cup pitted sweet cherries
- 1/4 cup walnuts
- 1/8 - 1/4 cup olive oil
- Salt and pepper to taste
- 3/4 cup chopped parsley
- 1/4 cup chopped French sorrel (optional)
- 1/2 lime squeezed (optional)

Preheat oven to 400 F
Wash sweet potatoes and remove any bad spots and ends; otherwise, leave peeling intact if it is smooth and clean. Cut sweet potatoes into 1/2 inch chunks, then cut cherries in half and remove pits. Coarsely chop walnuts. Put all of it into a bowl, drizzle with olive oil and sprinkle generously with salt and pepper. Add half of parsley. Stir ingredients to coat evenly. Pour onto baking sheet with parchment paper.
Bake for 20-25 minutes until potatoes are tender when pierced with a fork. Remove from oven and let cool for a few minutes then sprinkle on remaining parsley and sorrel/lime juice if used.
