Oven Roasted Carrots, Broccoli, Shallots, and Cashews

Ingredients

  • 5 large carrots, peeled and cut into coins
  • 6 cups broccoli florets
  • 3 tablespoons oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 large shallots, minced
  • 1/2 cup chopped cashews, roasted and salted

Preparation

Step 1

Preheat oven to 425 degrees.

Place the carrots, broccoli, onion, and cashews in a large bowl. Toss with oil, salt, and pepper.

Place veggies evenly on a baking sheet covered with foil.

Roast in a preheated oven for 20 - 25 minutes, tossing halfway through the roasting process.
