Ingredients

  • Sauce:
  • 1 large cauliflower
  • 1 onion, chopped
  • 4 slices of bacon
  • 1/2 oz butter or margarine
  • 2 oz mushrooms, sliced
  • 1 tomato
  • 2 oz butter or margarine
  • 1 1/2 oz flour
  • 3/4 pt. milk
  • 1/4 lb grated cheese
  • 2 oz potato chips (plain, lighly crushed)

Preparation

Step 1

For the cauliflower:
Trim cauliflower breack into sprigs and cook until tender. Arrange in a baking dish. Slice bacon into small pieces, fry with onions and mushrooms until bacon is cooked and onions and mushrooms are soft. Remove from heat and cut the tomato into small pieces and mix into bacon, onion and mushrooms.

For the Sauce:
Melt butter, stir in flour gradually until thick, add milk and add salt and pepper to test. When mixture thickens remove from heat, add cheese stirring until the cheese melts. Add the bacon, onion, mushrooms and tomato mixture to the cheese suace and pour over cauliflower. Sprinkle with crushed chips (if disired) and bake in oven at 350F until heated throughly.
