- 4-6 cups spinach
- 1/2 cup sliced strawberries
- 1/2 cup blueberries
- 1 tbsp good quality olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper
- Directions
- Whisk together oil and vinegar; add salt and pepper to taste
- Place spinach in large salad bowl
- Top with chicken and berries
- Toss in balsamic dressing just before serving
