Ingredients

  • 3 eggs
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 2 tsp vanilla
  • 3 cups all-purpose flour
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 3 cups zucchini, grated
  • 1 cup white raisins
  • 1 1/2 cups walnuts, chopped
  • 1 1/2 cups shredded coconut

Preparation

Step 1

1. Beat eggs and sugar together. Add oil and vanilla. Mix. Add dry
ingredients and mix. Add zucchini, raisins, nuts and coconut.

2. Line three bread pans with aluminum foil. Pour batter into pans. Bake
at 350° for one hour.
