RUM CAKE

Ingredients

  • Cake:
  • 1 package yellow cake mix
  • 4 eggs
  • 1/2 cup vegetable oil
  • 3/4 cup finely chopped pecans
  • 1-3 oz package instant vanilla pudding mix
  • 1/2 cup cold water
  • 1/2 cup rum
  • Glaze:
  • 1/4 lb butter
  • 1 cup sugar
  • 1/4 cup water
  • 1/2 cup rum

Preparation

Step 1

1. Oven 325. Grease and flour a tube pan. Sprinkle nuts over bottom of pan.
2. Mix all cake ingredients together and pour into pan. Bake for 1 hour or until toothpick inserted in center comes out clean. Remove from oven and let cool. Invert onto plate and make holes on top w/ a skewer or toothpick for the glaze.
3. Glaze: Melt butter in a saucepan. Stir in water and sugar and bring to a boil, boil 5" stirring constantly. Remove from heat and stir in rum. Drizzle warm glaze over top and sides of cake.
