Ingredients
- 1/3 cup quinoa, uncooked
- 2/3 cup water
- 1 cup dates, pitted
- 1/2 cup raw almonds
- 1/3 cup peanut butter
- 1/3 cup dark chocolate morsels
- 1/8 tsp. sea salt
- 1/4 cup unsweetened shredded coconut for coating
Preparation
Step 1
In a small sauce pan, bring the quinoa and water to a boil. Cover and simmer until the water is absorbed (approximately 10-14 minutes)
In a food processor, process the almonds until evenly chopped
Add the dates, cooked quinoa, sea salt, peanut butter and chocolate morsels to the food processor
Process until the mixture forms a ball
Using your hands, scoop out the mixture and form into approx. 1-inch balls. You will have 12-14 balls
Roll each ball in the shredded coconut to coat
Refrigerate for approx. 1 hour to solidify
