Ingredients
- 12 oz boneless pork cutlets
- 1/4 t kosher salt
- 3 Lg chilled cucumbers, spiralized
- 1 T + 1 t chili garlic sauce
- 1 T rice vinegar
- 1 1/2 t low sodium soy sauce
- 1/4 t sugar
- 1 t sesame oil
- 1 t water
- 1 c grape tomatoes, sliced lengthwise into thin pieces
- 1 c coarsely chopped cilantro
- 1/4 c chopped fresh mint
- 4 lime wedges

Preparation
Step 1
Spray Lg skillet with cooking spray; set over med high heat. Season pork with salt; cook until cooked through, 3 min per side. Transfer to cutting board to rest.
Make noodles: In 3 batches press spiralized cucumbers between double layers of paper towels; repeat using new towels for best results. Transfer to colander to drain. Snip noodles with scissors to shorten; set aside.
Make dressing in bowl: whisk chili sauce, vinegar, soy sauce, sugar, oil & water; set aside.
Thinly slice pork; place in serving bowl. Add noodles, tomatoes, herbs & dressing; toss to coat. Serve with lime wedges.
