Watermelon Gazpacho

Ingredients

  • 5 c cubed watermelon
  • 1c chopped, peeled, seeded cucumber
  • 1/2 jalapeño or Fresno pepper, seeded
  • 1/4 red onion, chopped
  • 1 t kosher salt
  • 2 T apple cider vinegar
  • OO, for drizzling
  • Diced avocado/cooked shrimp for garnish

Preparation

Step 1

In a blender or food processor, combine watermelon, cucumber, onion & chili; process until smooth.
Stir in salt & vinegar. Cover & refrigerate until well chilled. 30 min to 1 hr.
Drizzle each serving w/OO & garnish.
About 4 servings
