Glazed Apple-Maple Blondies

Ingredients

  • For the Blondies:
  • 1 1/3 cups packed brown sugar
  • 1/2 cup butter, melted and cooled
  • 1/2 cup maple syrup
  • 2 tsp. vanilla extract
  • 2 eggs
  • 2 cups all­purpose flour
  • 3/4 tsp. salt
  • 1/4 tsp. baking soda
  • 3 cups chopped peeled Granny Smith apples
  • For the glaze:
  • 1/4 cup butter
  • 1/2 cup maple syrup
  • 1/4 cup packed brown sugar

Preparation

Step 1

Preheat oven to 350f degrees. Line a 13x9 baking pan with parchment paper (go up the sides.)

In a large bowl, beat brown sugar, melted butter, syrup and vanilla until blended. Then beat in eggs.

In another bowl, whisk flour, salt and baking soda. Gradually add flour mixture into brown sugar mixture. Adding just a little at a time so the flour doesn't fly everywhere.

Finally stir in chopped apples.

Spread mixture into the prepared baking dish. Bake for about 25­30 minutes.
Just before blondies are finished baking, prepare the glaze. In a small sauce pan, melt butter over medium­low heat. Stir in syrup and brown sugar. Bring mixture to a boil over medium heat. Cook and stir until slightly thickened. Remove from heat and cool slightly.

Pour glaze over warm blondies and spread it all over. Allow blondies to cool then cut into 16 bars and serve!
