Ingredients
- 1 3/4 c thawed frozen or fresh sweet corn
- 40 cherry tomatoes, halved
- 15 oz can black beans, rinsed & drained
- 2 avocados, diced
- 1 red onion, finely diced
- 1/4 c cilantro, chopped (use the stems too)
- Dressing
- 2 T EVOO
- 1 lemon or 2 limes, juiced
- 1-2 t cumin
- 1/2 t kosher salt
- 1/2 t black pepper

Preparation
Step 1
Prep all veggie ingredients and add them to a Lg serving bowl. Toss to combine.
In sm bowl or measuring cup, whisk together the dressing ingredients & pour over the veggies. Toss gently to coat evenly & let rest about 10 min.
