Summer Corn, Avocado & Black Bean Salad

Ingredients

  • 1 3/4 c thawed frozen or fresh sweet corn
  • 40 cherry tomatoes, halved
  • 15 oz can black beans, rinsed & drained
  • 2 avocados, diced
  • 1 red onion, finely diced
  • 1/4 c cilantro, chopped (use the stems too)
  • Dressing
  • 2 T EVOO
  • 1 lemon or 2 limes, juiced
  • 1-2 t cumin
  • 1/2 t kosher salt
  • 1/2 t black pepper

Preparation

Step 1

Prep all veggie ingredients and add them to a Lg serving bowl. Toss to combine.

In sm bowl or measuring cup, whisk together the dressing ingredients & pour over the veggies. Toss gently to coat evenly & let rest about 10 min.
