Ingredients

  • 1/2 c onion
  • 1/2 c green pepper
  • 1 T EVOO
  • 1 c rice, uncooked
  • 1 t garlic powder
  • 1/2 t chili powder
  • 1/4 c low sodium tomato purée
  • 2 c water

Preparation

Step 1

Chop onion & green pepper.
Sauté onions & green pepper in oil until softened.
Add rice to skillet, stirring constantly until rice is lightly browned.
Add garlic powder, chili powder, tomato purée & water to skillet. Cover & simmer on low heat until rice is tender & water is absorbed, about 15-20 min.

Serve with fajitas, enchiladas or tacos.
