CHICKEN POT PIE CHOWDER

Ingredients

  • 1 tbsp. butter
  • 1 cup chopped onions
  • 1 cup diced celery
  • 1 tsp minced garlic
  • 2 1/2 cups chicken broth
  • 2 cups peeled cubed potatoes
  • 1 1/2 tsp dried thyme
  • 1/2 tsp poultry seasoning
  • 1/2 tsp sea salt
  • 1/4 tsp pepper
  • 1 can cream corn
  • 1 cup frozen peas and carrots
  • 2 cups cooked chicken breast, chopped
  • 1 cup creamilk
  • 1 tbsp. cornstarch
  • 1-2 tbsp. minced fresh parsley

Preparation

Step 1

Melt butter. Add onions and garlic. Cook about 3 minutes till softened.

Add broth, potatoes, spices and bring to a boil. Reduce heat to simmer for 10 minutes. Add cream style corn and peas and carrots. Simmer for 5 more minutes. Stir in chopped chicken and mix well.

Whisk cream and corn starch till no lumps. Add to chicken mixture and increase heat and simmer till thickened. Stir often.

Add parley and serve hot.
