Thai Pork Stuffed Omelette (Kai Yad Sai)

This recipe consists of an omelette stuffed with minced pork and vegetables. It is a tasty savoury snack that is quick to make, and is a great way to use up any vegetables that are laying around your kitchen. The pork and vegetable filling is nicely presented inside an omelette parcel, and it is fun to make and a great way to hide vegetables from kids who don’t like them!

Ingredients
- 3 eggs
- 100g minced pork
- 1/2 cup diced tomato
- 1/2 cup diced carrot
- 1/2 cup diced onion
- 1 clove finely chopped garlic
- 1/2 teaspoon pepper
- 2 teaspoon fish sauce
- 1 teaspoon soy sauce
- 1 teaspoon oyster sauce
- 2 tbsp ketchup
Preparation
Step 1
Pour 1 teaspoon of fish sauce into a bowl with 3 eggs, and beat the eggs thoroughly.
Step 2: Heat 2 tbsp of cooking oil in a wok on a high heat, making sure the wok is coated with oil. Then pour in the eggs into the wok, and gently swirl them around the wok whilst keeping it near the heat. Keep doing this until the eggs are no longer runny, and are evenly distributed across the wok.
Step 3: Run a spatular around the edge of the omelette, then carefully remove it from the wok and set aside on a plate for use later on.
Step 4: Give the wok a clean, and then heat 1 tbsp of cooking oil on a high heat, and when the wok is hot add 1 clove of finely chopped garlic and 1/2 cup of diced carrots and fry them for about 1 minute. Then add 100g of minced pork, break it up into small chunks, then add 1/2 cup of diced onion, 1/2 cup of diced tomato, stir thoroughly, and add 1 teaspoon of fish sauce, 1 teaspoon of soy sauce, 1 teaspoon of oyster sauce, 2 tbsp of ketchup, and 1/2 teaspoon of pepper. Stir fry everything for about 3 to 4 minutes until the pork and vegetables are cooked, then turn off the heat.
Step 5: Now spoon the pork mixture we just made into the centre of the omelette, and shape it into a square shape. Fold the omelette as shown in the video, then flip it over, use a knife to cut a cross into the top of the omelette, and then you are ready to eat! We had ours with some steamed jasmine rice which goes really well with this omelette recipe.
