Ingredients
- 1/3 cup extra virgin olive oil
- 4 garlic cloves, crushed
- 1/2 t anchovy paste (optional)
- 1/4 t red pepper
- 1 lb summer squash, cut into 1/2 inch pieces
- 1 lb zucchini, cut into 1/2 inch pieces
- 1 T fresh oregano, chopped
- 1/2 t salt
Preparation
Step 1
Heat the olive oil, garlic, anchovy paste, and red pepper in a skillet over medium heat until the garlic is sizzling and fragrant, 2-4 minutes.
Add the squashes and cook, stirring occasionally, until very tender, 12-16 minutes.
Stir in the oregano and salt
Yields: 6 servings
