Mixed Squash

Ingredients

  • 1/3 cup extra virgin olive oil
  • 4 garlic cloves, crushed
  • 1/2 t anchovy paste (optional)
  • 1/4 t red pepper
  • 1 lb summer squash, cut into 1/2 inch pieces
  • 1 lb zucchini, cut into 1/2 inch pieces
  • 1 T fresh oregano, chopped
  • 1/2 t salt

Preparation

Step 1

Heat the olive oil, garlic, anchovy paste, and red pepper in a skillet over medium heat until the garlic is sizzling and fragrant, 2-4 minutes.
Add the squashes and cook, stirring occasionally, until very tender, 12-16 minutes.
Stir in the oregano and salt

Yields: 6 servings
