Ingredients
- lettuce
- roasted chicken
- avocado (1-2)
- cherry tomatoes
- blue cheese
- bacon (6 strips)
- scallions (1 bunch)
- corn (2 ears)
- tortilla strips
- tossed with citrus lime vinaigrette or your favorite dressing
Preparation
Step 1
Cut the corn kernels off the cob and saute in butter just until they become tender. You do not want the corn to be real soft. Let the corn cool. Cook the bacon so it is crisp not burned. Cut the avocado into bite size pieces. Cut the scallions into small pieces and cut the cherry tomatoes in half. Chop the lettuce and add in chunks of avocado, the small cherry tomatoes, scallions, corn and mix well. Then add the chicken, blue cheese and crushed Tortilla chips. Mix with your favorite dressing and serve cold.
