Ingredients

  • 2 C. boiling water
  • 2 C. diced potatoes
  • 1/2 C. sliced carrots
  • 1/2 C. sliced celery
  • 1/4 C. chopped onion
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 C. margarine
  • 1/4 C. flour
  • 2 C. milk
  • 2 C. shredded Cheddar cheese
  • 1/2 1b. boiled ham, cut in small pieces (optional)
  • 1 Tsp vinegar (optional)

Preparation

Step 1

Add potatoes, carrots, celery, onion, salt and pepper to boiling water. Cover and simmer 10 minutes (or until tender, not mushy). Do not drain. Make white sauce with margarine, flour and milk. Add cheese, stir until melted. Add ham and undrained vegetables. Heat, do not boil. Serves 6 to 8 unless it's used as a main dish.
