Chicken Ranch Fried

Ingredients

  • ½ cup all-purpose flour
  • 2 eggs, lightly beaten
  • ⅓ cup ranch salad dressing
  • 2 cups finely crushed saltine crackers (1 1/2 sleeves)
  • 1 tablespoon ranch dry salad dressing mix
  • ½ teaspoon paprika (optional)
  • ½ cup vegetable oil
  • 2 ½ – 3 pounds meaty chicken pieces (breast halves, thighs, and/or drumsticks), skinned if desired

Preparation

Step 1

Preheat oven to 350*F. Line a baking sheet with foil. Place flour in a shallow dish. In a second shallow dish combine eggs and 1/3 cup ranch dressing. In a third shallow dish combine crushed crackers, ranch dressing mix, and, if desired, paprika. Coat chicken with flour; dip in egg mixture and coat with cracker mixture.
In a 12-inch heavy skillet heat oil over medium. Add chicken, a few pieces at a time, and cook 8 to 10 minutes or until golden, turning occasionally. Transfer chicken to prepared baking sheet. Bake 30 minutes or until chicken is done (170°F for breasts; at least 175°F for thighs and drumsticks). If desired, cover and chill up to 24 hours. Serve with additional ranch dressing.
