Microwave Flounder with Green Beans

  • 1 lb. Green Beans ~ fresh and trimmed
  • 2 TBSP Parsley ~ fresh and minces
  • 1 tsp Olive Oil
  • 1/8 tsp Salt
  • 2 tsp Dijon Mustard
  • 1 tsp Honey (omit when On Plan)
  • 4 Flounder Fillets ( Sole or Orange Roughy )


Servings 4


Step 1

In a microwave safe dish, combine green beans, parsley, oil & salt.

Cover with wax paper and microwave on high for 5 minutes; stirring once.

Place fillets on top of green beans, even thickness. Combine mustard and honey, spread over fillets. Cover with the wax paper & microwave for 2 minutes, rotate fillets ~ cooked parts toward the center and cook for 1 to 3 minutes longer.

Let stand 2 minutes, then serve.
