Cheesy Floret Soup

Delicious and creamy cheese soup with broccoli, cauliflower, onion s and celery.
- 3 cups fresh broccoli florets
- 3 cups fresh cauliflower florets
- 3 celery ribs
- 1 small onion, chopped
- 2 cups water
- 1/2 teaspoon celery salt
- 3 tablespoons butter
- 3 tablespoons all purpose flour
- 2 1/3 cups milk
- 1 pound Velveeta cheese, cubed
Preparation time 15mins
Cooking time 45mins
In a large saucepan, combine the first six ingredients. Bring to a boil. Reduce heat; cover and simmer 12-15 minutes or until vegetables are tender.
Meanwhile, in a small saucepan, melt butter; stir in flour until smooth.
Gradually stir in milk.
Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; add cheese. Cook and stir until cheese is melted. Drain vegetables; add cheese sauce and heat through.
