Pre-made pizza dough. You can make any type of vege/meat filliig (broccoli and Italian sausage) to roll into a pizza roll without using any cheese. OR this vege recipe from Lidia below. OR one of each (dough makes 2 rolls about 8 large slices each)

Ingredients

  • 3 tablespoons extra-virgin olive oil
  • 2 medium onions, sliced 1/4 inch thick
  • 1 bunch leeks (about 24 ounces), white and light green parts, sliced into 1/2-inch-thick half-moons
  • 1 teaspoon kosher salt
  • 1/4 teaspoon crushed red pepper flakes
  • 1 1/2 cups fresh ricotta
  • 1/2 cup grated Grana Padano

  • 2 Italian sausages removed from casing
  • head of brocolli chopped fine (size of crumbled sausage)
  • oregano
  • pepperoncino
  • 1 large egg, beaten
  • 1/4 cup chopped fresh Italian parsley

Preparation

Step 1

Set dough out to get to room temp. Oven temp 400 degrees. Put pizza stone (opt) on oven rack. Saute veges / sausage / broccoli. For sausage/broccoli, cook sausage, breaking up. Remove from pan. Add chopped broccoli, a bit of water, oregano, s&p. Let mixture cool a bit.

Cut dough into 2 pieces. Roll into long, wide, oval. Top with filling and roll up from short end. Brush with egg/water wash. Place on heated pizza stone or baking sheet. 20 - 25 minutes. Cool 5 minutes. Slice into wide slices.
