ULTIMATE GUACAMOLE

Ingredients

  • 2 ripe avocados, halved and pitted
  • 2 heaping TBS diced white onion
  • 1/2 cup diced fresh tomato
  • 1 TBS finely diced avocado, seeded
  • 1 TBS lime juice
  • 2 TBS chopped cilantro
  • 1/4 tsp kosher salt
  • 1/4 tsp cumin
  • 1 TBS grated Cotija cheese for garnish

Preparation

Step 1

1. Spoon avocado flesh from the skins and place in a bowl. Lightly chop the avocado with the edge of a spoon or press with a potato masher - make sure it is chunky
2. Add all the other ingredients except the Cotija cheese and stir gently just to combine. Adjust seasonings.
