Basic Mayonnaise

Different variations:
Herb: Add 2-4 Tbs chopped fresh chives, parsley, fill or tarragon to basic recipe before blending oil.
Mustard: Add 1Tbs mustard before adding oil
Extra garlic: Add 2-3 cloves instead of 1.
Horseradish: After blending the basic, add 1Tbs horseradish at a time until desired taste is reached.
Chili-lime: replace lemon juice with 1 Tbs lime juice and add 1 Tbs sriracha chili sauce; add more chili and lime if desired.

Ingredients

  • 1 large pasteurized egg
  • 1 medium garlic clove
  • 1 Tbs fresh lemon juice
  • Large pinch kosher salt
  • 1 C vegetable oil

Preparation

Step 1

Blend first 4 ingredients in a blender or good processor until smooth. With machine running, drizzle the oil in a thin stream until a thick sauce forms.
