Ingredients

  • Cream Cheese Spread:
  • 10 slices bacon
  • 1 cup grape tomatoes, quartered
  • Salt & pepper, to taste
  • 2 cups chopped lettuce, spinach, or romaine
  • 4 burrito-sized flour tortillas or veggie wraps
  • 3 oz. cream cheese, softened (room temperature)
  • 2 TB mayonnaise
  • Avocado Spread, optional:
  • 1 large avocado, pitted
  • 1 TB fresh lime juice
  • 1/4 cup regular or light sour cream
  • 1/8 tsp salt
  • 1/8 tsp pepper

Preparation

Step 1

Place bacon on a foil-lined baking sheet, then put in a cold oven. Bake at 400 for 20-25 minutes. Transfer to paper towels, then crumble when cool. In a small bowl, toss tomatoes with salt & pepper. In another small bowl, combine cream cheese & mayo. If using the avocado spread, combine all ingredients in a food processor or blender until smooth. In a large bowl, combine bacon, tomatoes, & lettuce. Spread the cream cheese spread or avocado spread onto the tortillas or wraps. Divide the bacon mixture evenly among the tortillas or wraps, placing the mixture on the bottom third. Roll the wraps up tightly & cut in half.
