Ingredients

  • Squash
  • White onion
  • bell pepper
  • Jalapeno, optional
  • Celery, just a little
  • Egg
  • Flour 1/2 - 1 cup
  • Oil
  • Salt and pepper

Preparation

Step 1

Grate squash with cheese grater. Chop vegetables and add to squash.
Beat 1 egg and put on top.
Add flour to make waffle like consistency. Do not add water.
Salt and pepper to taste.
Consistency should be like heavy waffle mix.
Spoon in a little 1/4" hot grease.
Cook over medium heat. It will brown on the outside fast but needs more time to cook the center.
Turn with a spatula.
