Greek Salad

Ingredients

  • Salad:
  • 4 cloves garlic - chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dijon mustard
  • 1/4 cup red wine vinegar
  • 1 teaspoon salt
  • 1/2 cup olive oil
  • 3 tablespoons fresh lemon juice - more to taste
  • 2 teaspoons sugar
  • 5 cups chopped romaine lettuce
  • small red onion - thinly sliced
  • 1 English cucumber - chopped
  • 1 cup cherry tomatoes - halved
  • 1 cup kalamata olives - halved or whole
  • 15 oz garbanzo beans - one 15 oz. can, drained and rinsed
  • 2/3 cup feta cheese - crumbled

Preparation

Step 1

Mix dressing ingredients and top on salad when ready to serve.
