Carrot Cake Pecan Cookies with Orange Crean Cheese Frosting

Ingredients

  • 1/4 c softened butter
  • 1/4 c coconut oil
  • 1/3 c +1 t sugar
  • 1 T molasses
  • 1 t vanilla
  • 1 egg
  • 1 c flour
  • 1 t baking powder
  • 1/4 t salt
  • 1 t cinnamon
  • 1/4 t nutmeg
  • 1/2 c grated carrot
  • 1/4 c pecans
  • frosting
  • 2 oz softened cream cheese
  • 1/4 c softened butter
  • 1 t orange zest
  • 1 c powdered sugar

Preparation

Step 1

Preheat oven to 350. Line baking sheet with parchment paper. Set aside.
Cream butter, oil, sugar and molasses together until completely smooth. Scrape sides and mix again. Stir in vanilla and egg. Then stir in dry ingredients until just combined. Stir in carrots and pecans. Scoop onto prepared baking sheets and bake 8-9 minutes or until edges are brown and cookies have poofed up slightly in the center. Cool 2 minutes on sheet, then transfer to cooling rake. Cool to room temp.

For the frosting, place all ingredients into small bowl and whip until smooth. Spread each cookie with frosting.
