Chicken & Mushroom Crepe Casserole

Ingredients

  • Crepes
  • 1 cup flour
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 2 tbs unsalted butter melted and 1 tbs for greasing pan
  • 1/2 tsp salt
  • Filling
  • 3 cups cooked chicken
  • 1 cup swiss cheese grated, plus extra for topping
  • 1 cup gruyere cheese, plus extra for topping
  • 1 10 oz can cream of mushroom soup
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 clove garlic cut in half
  • salt and pepper to taste

Preparation

Step 1

1. Combine flour and eggs in large mixing bowl. Once combined, slowly pour in water and milk.

2. Stir well and add melted butter and salt

3. Place a small 7-8" frying pan over med high heat and melt 1/2 tbs butter

4. Repeat with remaining batter and set crepes aside

5. Preheat over to 350F and rub halved garlic all over the inside of a 9x13 baking dish.

6. In a large bowl combine mayo, sour cream, mushroom soup and cheeses

7. Stir and fold in shredded chicken and season with salt and pepper

8. Spoon 1/3 cup of mixture into each crepe and roll it up like a burrito.

9. Cut crepes in half or thirds and carefully transfer to baking dish. Place them close together so they stand upright.

10. Sprinkle extra cheese over top of casserole.

11. Put baking dish in oven an bake for 20-25 minutes or until cheese is melted and bubbly.

12. Remove from oven and let rest 5 minutes before serving
