Ingredients
- 500 g (1lb) tomatoes roughly chopped
- 2 avocados peeled and chopped
- 1 small red onion thinly sliced
- FOR THE LEMON BASIL VINAIGRETTE
- 3 tbsp fresh basil finely chopped
- 2 tbsp olive oil
- 2 tbsp lemon juice
- salt and pepper to taste
Preparation
Step 1
Place the tomatoes in a large bowl then season generously with salt and pepper.
Add the avocado and red onion.
Mix together all the dressing ingredients and pour over the salad.
Gently toss to coat the vegetables in the dressing then serve.
