Ingredients
- Gremolata:
- 1 center-cut salmon fillet (1 1/2 lbs.)
- 1 tbsp. live oil
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 cup minced fresh parsley
- 2 Tbsp. olive oil
- 1 Tbsp Lemon juice
- 1 tsp. grated lemon peel
- 1 minced garlic clove
- 1/2 tsp. salt
- 1/4 tsp. pepper
- Dill and Caper Butter:
- 1/4 cup softened butter
- 1 Tbsp minced shallot
- 1 Tbsp minced fresh dill
- 1 tsp. Dijon mustard
- 1 tsp. chopped capers

Step 1
1. Place a laarge oven-safe skillet in a cold oven. Preheat oven to 450 degrees F. Brush salmon with oil and sprinkle with salt and pepper.
2. Carefully remove skillet from oven. Place fish, skin side down, in skillet. Return to oven; bake salmon uncovered, 14-18 minutes or until it flakes easily and a thermometer reads 125 degrees. Cut salmon into four equal portions.
3. In a small bowl, mix ingredients for desired sauce. Top salmon portions and serve.
