Ingredients

  • 4 skinless, boneless chicken breasts
  • 1/4 c. olive oil
  • 1 teaspoon minced garlic
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon crushed red pepper
  • AIOLI
  • 1 cup mayo
  • 1 jar (7oz) roasted red peppers, drained & patted dry
  • 2 Tablespoons red wine vinegar
  • 2 Tablespoons capers, rinsed and drained
  • 1 Tablespoon chopped garlic
  • 4 leaves romaine lettuce
  • 4 kaiser rolls, split

Preparation

Step 1

Place chicken breasts in 1 gallon zip bag. Add oil, garlic, coriander, cumin & crushed red pepper. Close bag, refrigerate at least 1 hour or up 24 hours.

For aioli, mix ingredients in blender or food processor until smooth. Refrigerate, covered 1 hour.

To broil chicken: heat broiler. Line broiler pan with foil, place chicken on rack. Discard remaining marinade. Broil 4-5 inches from heat for 12-14 minutes, turning once.

Place 1 lettuce leaf, then 1 chicken breast half on split kaiser roll. Spoon on 2 tablespoons aioli.

Serves 4.
