Quinoa, Beet & Feta Salad

Protein- packed quinoa and feta create a hearty salad - perfect for picnics.

Ingredients

  • 1 c. cooked quinoa
  • 2 c. cooked beets, diced
  • 1 c. feta cheese, diced
  • 1/4 c. walnut pieces
  • 8 radishes, sliced
  • extra-virgin olive oil
  • balsamic vinegar
  • 1/3 c. parsley, roughly chopped
  • red pepper flakes

Preparation

Step 1

Toss together the quinoa, beets, feta, walnut pieces and radishes in a bowl.

Drizzle with olive oil and balsamic vinegar to taste, toss again.

Garnish with chopped parsley and a good pinch of pepper flakes.

Makes 2 to 3 servings.
