Ingredients

  • 20 ounces ground pork
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 1/2 cups of sweet potato, peeled and cubed into 1/2 inch dice
  • 1 teaspoon garlic powder
  • 2 tablespoons medium chili powder 1/4 teaspoon hot chili powder or cayenne pepper
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 can, 14 1/2 ounce low sodium chicken broth
  • 2 chipotle chilies from can of chipotles in adobo sauce, chopped
  • 1 can, 15 1/2 ounce black beans, drained and rinsed
  • 2 cups of water

Preparation

Step 1

In a large non-stick skillet over medium heat, cook pork until no longer pink, drain, and set aside.

In the same skillet over medium heat, add olive oil and onions and saute’ for 3-5 minutes. Add sweet potatoes and continue to cook for another 5 minutes, stirring after the addition of the sweet potatoes.

In a small bowl combine garlic powder, both chili powders, cloves, cinnamon, cumin, black pepper and salt. Sprinkle this mixture over onion/sweet potato mix in the pan. Cook for another minute while stirring to get everything covered with spice mix. Add pork back to pan and stir again, trying to get all the pork incorporated. Fry this mixture for 5 minutes over medium heat to bring out all the spice flavors. It is important to stir once every minute so it does not burn. Everything in the pan should take on an orange glow.

Add broth, chipotle chilies, black beans and water to the pan. Stir to combine. Bring the pan to a boil, then reduce heat to simmer, cover for 20 minutes and get ready for a taste sensation.
