Ingredients

  • Lemon cake:
  • 1 box (16-18 oz) lemon cake mix
  • 1 pkg (3 oz) instant lemon pudding mix
  • 1 cup sour cream
  • 1 cup vegetable or canola oil
  • 4 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • pinch of salt
  • Fluffy lemon frosting:
  • 1-1/3 cups milk, whole milk is best
  • 1 envelope Dream Whip
  • 1 package (3 oz) instant lemon pudding mix

Preparation

Step 1

Prepare 3 9-inch round cake pans by spraying with cooking spray.

TO MAKE THE CAKE:
Combine all ingredients in a mixing bowl and stir until well combined and mixed together. Divide batter evenly among 3 9-inch round cake pans. Bake as directed on cake mix box.

Let cakes cool completely before frosting.

TO MAKE THE FROSTING:
Combine all ingredients in a mixing bowl and beat with a handheld blender, or bowl of a stand mixer, on low speed until mixed together. Gradually increase speed to high and blend for 4-6 minutes, or until soft peaks form.

Refrigerate until use or spread right away in between each cake layer, on the top of the cake and around the sides.

For a thicker frosting you will want to double the frosting recipe.
