Ingredients
- 1 c. flour
- 1/2 c. butter
- 1/4 c. powdered sugar
- 1 c. sugar
- 2 t. lemon peel
- 2 T. lemon juice
- 1/2 t. b.p.
- 1/4 t. salt
- 2 eggs
- powdered sugar
Preparation
Step 1
Mix flour, butter and powdered sugar. Press into ungreased 8X8 or 9X9 pan. Bake 20 min. 350. Beat sugar, lemon peel and juice, b.p., salt, and eggs with mixer on high speed for 3 minutes or until light and fluffy. Pour over hot crust and bake 25 to 30 minutes or until no indention remains when touched in center. Cool, dust with powdered sugar. Cut into 1 1/2 inch squares. May add 4 to 6 drops yellow food color.
