WW Gingery Beef and Mushroom Lettuce Wraps

  • 1 lb lean ground beef (7% or less fat)
  • 1 c thinly sliced onion
  • 2 T minced peeled fresh ginger
  • 2 garlic cloves, minced
  • 2 c thinly sliced bok choy
  • 2 c thinly sliced white mushrooms
  • 1 red bell pepper, thinly sliced
  • 3 T reduced sodium soy sauce
  • 8 Lg Bibb or leaf lettuce leaves
  • 1/4 c thinly sliced fresh mint leaves
  • Lime wedges



Step 1

Spray Lg skillet with nonstick spray & set over med high heat. Add beef, onion, ginger & garlic. Cook breaking beef apart with wooden spoon until browned, 5-7 min,

Add bok choy, mushrooms, bell pepper & soy sauce. Cook stirring occasionally until bok choy is wilted & bell pepper is crisp tender, about 3 min.

Spoon about 1/2 c beef mixture into each lettuce leaf. Sprinkle with mint & serve with lime wedges.
