CHEESY CITRUS PASTA & VEGGIES

Ingredients

  • 2 tbs oil
  • 1 onion, diced
  • 1 1/2 cups orzo pasta
  • 1/4 cup chicken stock
  • 3 cups chicken broth
  • 1/2 cup frozen peas
  • 1/3 cup grated Parmesan cheese
  • 2 tbs sliced basil
  • 1/4 cup heavy cream
  • 1 tsp lemon zest + juice of 1 lemon

Preparation

Step 1


Heat oil in a pan. Add onion, saute 2 min. Add orzo, toast 2 min. Add stock, cook 1 min. Add 3 cups broth, bring to a simmer, cook 1O min. Remove from heat. Stir in peas, Parmesan, basil, cream, zest, and juice. Season. Top each serving with Parmesan. SERVE & ENJOY...
