Ingredients
- 1-1/2 cups Wheat Bran
- 1 cup buttermilk
- 2/3 cup brown sugar
- 1 egg, slightly beaten
- 1/2 teaspoon vanilla
- 1 cup all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 11/2 teaspoon salt
- 1/2 cup raisins
Preparation
Step 1
Preheat oven to 375F.
In a large bowl, combine bran and buttermilk; let stand 5 minutes.
Stir in vegetable oil, brown sugar, beaten egg, and vanilla.
In a separate bowl, whisk together flour, baking soda, baking powder and salt. Sift all dry ingredients.
Add to bran mixture and stir until just combined.
Gently fold in raisins and spoon into lined muffin tin.
Bake 15 - 20 minutes.
