Harlequin Pie

Ingredients

  • Crust:
  • 1 1/2 cups brazil, walnuts or pecans, ground
  • 1/4 cup sugar
  • 1/8 tsp. salt
  • 1 egg (separated) beat white until it peaks

Preparation

Step 1

Crust:
Combine all ingredients. Line bottom of 9" pie plate with waxed paper and butter that lightly. Press crust into pan and bake at 375 deg. for 12-15 minutes, or until golden brown. Remove crust from pie plate. Remove waxed paper while very warm.

Filling:
In a saucepan, melt:
1/4 cup milk
1 tbsp. instant coffee granules
16 standard-sized marshmallows
Beat the egg yolk and add to hot mixture. Cook 1 minute longer. Cool. Just before it sets (about 30 minutes) add:
1 cup whipped cream
1/4 tsp. almond extract.
Pour into crust.

Topping:
Melt 1 tbsp. milk and 1/4 cup semi-sweet chocolate pieces. Drop by tsp. over the pie and cut into filling with edge of spoon.

Cool and serve.
