BEEF****Wagyu Beef Burger

03/09/16 - These were good - basically old-fashioned burgers, essentially. I found them to be rather dense, almost like chopped steak. Worth a redo, though, if you're going to have a burger.

Ingredients
- 2 Wagyu beef burgers
- Salt and pepper
- Hamburger bun (Ace Rosemary and Sesame used)
- French-Fried onions, mayo or Sriracha Mayo, arugula or spinach and crumbled or thinly-sliced blue cheese for topping.

Step 1
Preheat grill or grill pan to high. I used the cast iron skilled on just below medium heat. Lightly mix the ground beef in a bowl and form into a patty. Avoid overworking the meat in order to achieve a looser bind. Rub the patties lightly with olive oil and season both sides well with salt and pepper. When pan is hot, place burger at the hottest part. Flip after three minutes (more like every three minutes). For medium-rare, cook approximately 3-4 minutes more. (It took about 12 minutes for them to be done where they weren't actually bleeding on the plate - even after 50 minutes sitting at room temp before I cooked them, so keep that in mind)
Remove from the grill and allow to rest briefly. Saute buns briefly in skillet drippings, if desired. Place on bun and add toppings of choice.
