Cranberry Almond Spinach Salad

  • One pound of baby spinach
  • 1 cup almonds, toasted
  • 1 cup dried cranberries
  • 1/2 cup olive oil
  • 3 tablespoons white sugar
  • 3 tablespoons honey
  • 1 tablespoon finely minced shallot
  • 1/4 cup white wine vinegar
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons sesame seeds, toasted
  • 1 tablespoon poppy seeds



Step 1

For the dressing, whisk together olive oil and sugar until sugar has dissolved. Stir in honey, shallot, white wine vinegar, apple cider vinegar, sesame seeds and poppy seeds until mixture is well blended.

For the salad, place spinach, cranberries and almonds in a large bowl. Drizzle dressing over salad and toss.
