Roasted Garlic Soup with Parmesan

Ingredients

  • 26 cloves garlic, unpeeled
  • 2 tablespoons light butter
  • 2 1/4 cups sliced onion
  • 1 1/2 teaspoons fresh thyme
  • 18 cloves garlic, peeled
  • 3 1/2 cups nonfat chicken broth
  • 1/2 cup half-and-half, fat free
  • 1/2 cup parmesan cheese
  • 4 lemon wedges

Preparation

Step 1

1. Heat oven to 350.

2. Roast garlic. Remove pulp.

3. Saute onion and thyme in butter until translucent. Add roasted and raw garlic. Cook 3 mins.

4. Add broth. Cover and simmer until garlic is tender, ~20 mins.

5. Puree. Simmer with half and half. Season. Divide cheese among 4 bowls, ladle soup on top. Squeeze in lemon.
