Ingredients
- 6-8 russet potatoes- peeled & chopped
- 1 package bacon
- salt/pepper to taste
- 1/4 cup parmesan cheese
- 2 tbsp bread crumbs
- 1 tbsp chives

Instructions
Fry bacon in a large cast-iron skillet over medium-high heat until evenly browned and crisp
Remove from the pan & add the potatoes to the bacon drippings
Season with salt & pepper
Reduce heat to medium & cook potatoes for about 20 minutes, stirring occasionally, until tender and browned
Chop bacon & sprinkle on top along with cheese, chives & bread crumbs before serving.
