Maid of Honour Tarts

Ingredients

  • 12 unbaked tart shells
  • 4 tbsp. butter
  • 1 egg
  • 1/4 tsp. almond flavouring
  • Raspberry or cherry jam
  • 1/4 cup granulated sugar
  • 1/2 cup rice flour

Preparation

Step 1

Line 2 1/4" tart pans with rich pastry. In each, put a teaspoonful of jam.

Cream butter and blend in sugar. Add egg and beat until light. Then stir in rice flour and add flavouring. Put a rounded teaspoonful of egg mixture in each jam-filled tart pan.

Bake at 400 deg. for about 15 minutes, until pastry and topping are done.
