Italian Sausage

this recipe does not require stuffing into casings to enjoy. Try mixing with sweet red pepper, onion and chopped tomato for a fresh pasta dish.

Ingredients

  • 2 lps fo ground pork
  • 1 tbsp of coarse ground sea salt
  • 1 tbsp of ground fennel seed (ground in grinder or mortar and pistle)
  • 1 1/2 tbsp of sweet paprika
  • 1 tbsp of finely minces fresh garlic
  • 1 tbsp of sugar
  • 1 tsp of balck pepper
  • 3 tbsp of red wine vinegar

Preparation

Step 1

Mix together thoroughly and you have italian sausage. Improves with aging in the fridge.
