Pineapple Casserole

Ingredients

  • 2 cans (20-ounces) pineapple chunks reserve juice
  • 1/3 cup granulated sugar
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon soda
  • 1 stick (4-ounces) butter
  • 1 cup cheddar cheese shredded
  • 25 buttery round crackers (Ritz are good) crumbled
  • or 1 cup crushed cornflakes (measure after crushed)

Preparation

Step 1

Yields: 6-8 servings
1. Preheat oven to 350 degrees F (175 degrees C).
Butter or grease one 2 quart casserole dish.
2. Mix flour, salt, soda sugar in small bowl. Mix well.
Add the drained pineapple. Mix well.
Reserve 1/4 cup (4 tablespoons) of the pineapple juice
3. Add cheese; mix well and pour into casserole dish.
Drizzle 1/2 the melted butter over casserole and mix well. Drizzle the 1/4 cup pineapple juice now and mix well.
Add the topping (crackers or cornflakes) and spread it over casserole.
4. Bake at 350 F. degrees for 35-40 minutes.
