  • 1 store bought graham cracker crust
  • 2 large eggs, cold
  • 2 large egg yolks, cold
  • 3/4 cup sugar
  • 1/2 cup fresh lemon juice
  • 6 tbsp. cold unsalted butter, cut into 6 pieces

Step 1

in a pot, bring about 1 1/2 inches of water to a boil. meanwhile, in a metal bowl, whisk the eggs, yolks, and sugar for about 1mins. set the bowl over the pot and whisk for 2mins. whisk in lemon juice in 3 parts.

continue whisking vigorously, until mixture is thickened and light in color. total cooking time is 8 to 10mins. turn off heat and whisk in butter 1 piece at a time. pour warm mixture into crust; place the pan on a baking sheet.

place tart under the broiler for a few seconds to brown. serve at room temp or cold
